My girlfriend got me a packet of “Rainbow Carrots” for my birthday this spring. I wasn’t too optimistic, but planted them just to see what might happen. I would say they were a great success!

Typically I would chop them up and freeze them for future use. I don’t know if I want to do that with these, so I am going to try and few easy recipes like the one above.
