As the days grow shorter and the nights get colder, it has come time to clean out the garden. While I haven’t had a hard killing frost quite yet, the light frosts I have had signal it’s time.
Final count is a few dozen squash/pumpkins, a 5 gallon bucket of onions and in addition to the tomatoes I have already harvested, I pulled around 10 lbs of tomatoes off the vine. Many of the tomatoes are still green, but they will ripen on the counter. Once they turn red, they get tossed in the freezer until I have a chance to make one big batch of tomato sauce. I am experimenting with dehydrating the onions so they are more shelf stable. The pumpkins and squash should keep for a few months.
